½ cup chopped onion
½ cup butter
5 cups milk
10 large potatoes (10 cups sliced)
3 teaspoons salt
¼ teaspoon pepper
To make sauce…cook onions in butter for approx. 5 minutes…
Add milk… stir in ½ cup flour… 3 teaspoons salt… and
¼ teaspoon Pepper…
Cook on medium stirring occasionally until it thickens…
Spread some sauce on bottom of pan (9X13)
Add a layer of sliced potatoes…
Repeat layers until all the sauce and potatoes are in pan
Bake @ 350 for 45 minutes covered… stirring once…
Then take cover off and bake an additional 30 minutes
Peel and slice 5-6 potatoes…
can vary depending on the amount that you want to make…
Put a little olive oil in bottom of skillet…
Place a layer of sliced potatoes… add some sweet peppers… hot peppers… and onion cut into bite size pieces…
Add the remaining potatoes and place some more peppers and onions on top…. Sprinkle with salt and pepper…
Cook on low for approx. 1 - 1 ½ hours….
1 can green beans…either home canned…fresh… or store bought…
Small amount of oil…
Diced onion… (optional)
Put some olive oil into skillet…
Drain green beans and add to skillet…
Add sone diced onion (optional)
Cook on medium for 15-20 minutes
